Pumpkin Energy Balls

These Pumpkin Energy Balls are not only healthy and delicious, they are the perfect to quell those hunger pangs and give you a boost of energy until your next meal. They are a wonderful dessert too!

 

Ingredients

  • 1 ¼ cups Gluten Free Rolled Oats
  • ¼ cup ground Flaxseed
  • 1 tablespoon Chia Seeds
  • 1 ½ teaspoons Ground Ceylon Cinnamon
  • ½ teaspoon Ground Ginger
  • ¼ teaspoon Ground Nutmeg
  • teaspoon Ground Cloves
  • A pinch of Sea Salt
  • ½ cup creamy Almond Butter
  • ¼ cup Pumpkin Puree
  • ¼ cup Honey
  • 1/2 cup mini Chocolate Chips
  • Instructions

    1. Mix in the bowl of a stand mixer with the paddle attachment, oats, flaxseed, chia seeds, cinnamon, ginger, nutmeg, cloves, and salt. Mix on low until ingredients are combined. (If you don't have a stand mixer, you can mix the energy balls in a bowl with a wooden spoon, or your hands).
    2. Add the almond butter, pumpkin, honey, and vanilla paste. Mix until the ingredients come together.
    3. Stir in the mini chocolate chips.
    4. Roll the mixture into balls, about 2 tablespoons per ball. Place the pumpkin energy balls into an airtight container and store in the refrigerator for up to 1 week.
